@Tiks10 - that is a great chicken curry recipe - must try it.
I have a recipe for lamb curry - which is a nice alternative to a traditional Sunday lunch - which will serve 2 very generously.
1 medium sized packet of cubed lamb (500g or thereabouts)
2 x large onions ( 3x medium ones)
3 x tbsps vegetable oil
4 x bay leaves
2 inch lump of fresh ginger
6 cloves garlic
10 cloves
15 peppercorns
1 stick cinammon
1 tsp cumin
1 tsp fennel seeds
a small handful of raisins
2 whole red chilli
half a pint of water
. . . . . a handful of red lentilsChop the onions finely along with the garlic and ginger. Brown the onions thoroughly in the oil and add the lamb, cook till browned all over.
Add the ginger and garlic along with the bay leaves, cloves, cinammon and chilli. Crush the peppercorns, cumin and fennel seeds in a teaspon of salt and add to the mix. Turn the whole and ensure that the spices coat the meat. Cook in this way for about 10 minutes on a low to medium heat.
Now, add the water and the lentils. Turn thoroughly and ensure the flavours are mixed. Turn up the heat and bring to the boil (with the lid on) for 2 minutes. Add the small handful of raisins at this point. Turn the heat down v. low and simmer with a lid on for 30 minutes, stirring occassionally.
Taste for flavour - you may wish to add a bit of salt or a further twist of pepper (though I doubt it!).
Serve with boiled rice and a side salad of shredded lettuce, cucumber, onions and tomatoes drizzled with lemon juice.

i just cannot see why people hate cooking- yes, it may take a hell of a longtime to cook some foods, but the end result is great. its also cheaper than most supermarkets. i, of course buy fresh. just tastes better. fav dish? risotto- try adding a glass of wine whislt cooking. it makes a difference!

what i am getting at is things like risottos do not have to be much work- i seldom get in from college till gone 7pm, so i don’t want something that is going to take forever. weekends on the other hand when i have time, i quite like to experiment. i do’nt cook with children as i have none, its just me my dad and my uncle. mainly just me and my dad as my uncle wo’nt eat anything without brown sauce on it, yuck!

Very true bluesofty and big up to you and all the Mum’s who do such a terrific juggle job. Must say though that often young and childless means often eating out more and spending less time at home so glad that bigdave, although a student, is certainly squashing the student stereotype. What’s your fav risotto recipe Dave?

@tiks10 - No need for tomatoes or coconut. The secret is in the slow cook of the whole dish - an occasional stir stops sticking! - that way the masala really browns off and the flavours amalgamate quite naturally.
I’d love to come to the Qype Meat Up but as am Directing a show (Alice in Wonderland) and with work being quite as crazy as it is too . . . . I’m finding less and less time to socialise. Which is not good! I must find the time!! :-)
