Carrot Cake recipe for someone who doesn't like oranges?

I have hundreds of carrots (they were a bargain) and no more room in the freezer for soup, so I though Carrot Cake! But so far all the recipes I’ve found use orange zest/juice and I don’t like orange. Does anyone have any ideas? I’d also like to be able to use up some of my wholemeal flour, but otherwise it doesn’t have to be in the least bit healthy!

Ok, keep you’re fingers crossed, I have just put Lizzielocky/Bluesofty’s Carrot and Apricot cake in the oven! A bold step for me since I rarely bake and ALWAYS go off piste when following a recipe.
If it works and tastes good I will of course let you know and post the recipe. If it’s minging you will never hear from me again….... -

Well, it’s not half bad; needs a few tweaks, not least that I used too big a tin because I only have the one! I used the John Barryman carrot cake recipe from the BBC/food website, but substituted the 4 tbsps of honey for an apricot puree of my own concoction: 50gms chopped dried apricots, 200mls water, 2 whole cloves, a piece of cinnamon, one split cardamom pod. I simmered the lot until the water had gone syrupy and the apricots were mushy. Then I removed the whole spices & blitzed the lot into a puree. Next I stirred in castor sugar to taste (remember it’s replacing honey) while the puree was still hot enough to dissolve it. I also added some chopped apricots to the whole mix.
