meaty minestrone

Just cooking a meaty minestrone so I though I would put it up here for a cold winter evening.
Boil a smoked ham hock for 2 hours or until cooked adding and onion, potato and a carrot.
Drain and keep stock allow ham to cool.
Saute chopped onion, chopped carrot until transparent then add sliced garlic and assorted finely chopped other seasonal veg, I am doing carrots, potatoes, cabbage, courgettes. Cover with stock from ham, rind of a parmesan cheese and simmer after bringing to the boil for 40 minutes.
Adjust seasoning and add chopped coriander, a can of haricot beans and tin of tomatoes. Simmer for another 20 minutes.
Now you can thicken with various things but best is just taking out a spoonful of beans and potatoes, mashing and stirring back into the pot.
Now flake of about 300 grams of ham in chunks and add to the soup.
Simmer for another 20 minutes and you have the stuff of life itself.
Add parmesan cheese and crushed basil and lemon juice a the end.
Wow.
